  • 1 lb Boneless, Skinless Chicken Breasts Can substitute with chicken thighs
  • 3 cloves Garlic Minced; consider using roasted garlic
  • 1/4 cup Fresh Lemon Juice Substitute with apple cider vinegar if needed
  • 1 Onion Diced; red onion can be used
  • 1/4 cup Water
  • 1 tbsp Olive Oil Can replace with avocado oil
  • 2 tbsp Red Wine Vinegar Can be substituted with white wine vinegar
  • 1 tsp Oregano Fresh oregano preferred for better flavor
  • 1/4 tsp Allspice Optional
  • 1 tsp Lemon Pepper Regular pepper can be used
For the Tzatziki
  • 1 cup Fat Free Plain Greek Yogurt Regular yogurt can be used for richer taste
  • 1/2 cup Grated Cucumber Squeeze out excess moisture
  • 2 tbsp Chopped Fresh Parsley Fresh preferred over dried
  • Salt To taste

Method
 

Step-by-Step Instructions
  1. Prep Slow Cooker: Spray the slow cooker with nonstick cooking spray and place the chicken inside.
  2. Make Marinade: In a bowl, combine garlic, lemon juice, onion, water, olive oil, red wine vinegar, oregano, allspice, and lemon pepper. Pour over chicken.
  3. Cook: Cover and cook on HIGH for 3-4 hours or LOW for 6-8 hours until chicken is tender.
  4. Prepare Tzatziki: Mix Greek yogurt, garlic, cucumber, parsley, and salt in a bowl. Refrigerate for at least 1 hour.
  5. Shred Chicken: Remove lid and shred chicken in the cooker. Mix with juices.
  6. Serve: Scoop chicken into warm pitas, top with tzatziki and additional toppings.
