- Lightly grease the inside of your slow cooker with nonstick spray or olive oil and set to LOW or HIGH.
- Place chicken in a single layer at the bottom of the slow cooker.
- In a mixing bowl, whisk together honey, Dijon mustard, yellow mustard, minced garlic, olive oil, chicken broth, salt, and black pepper.
- Pour sauce over chicken, ensuring it's well-coated. Use a spatula to press down any chicken sticking out.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until the chicken is tender.
- Mix cornstarch with water if using, and add during the last 10–15 minutes of cooking for a thicker sauce.
- Return chicken to sauce and garnish with fresh parsley before serving.
