Step-by-Step Instructions
  1. Lightly grease the inside of your slow cooker with nonstick spray or olive oil and set to LOW or HIGH.
  2. Place chicken in a single layer at the bottom of the slow cooker.
  3. In a mixing bowl, whisk together honey, Dijon mustard, yellow mustard, minced garlic, olive oil, chicken broth, salt, and black pepper.
  4. Pour sauce over chicken, ensuring it's well-coated. Use a spatula to press down any chicken sticking out.
  5. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until the chicken is tender.
  6. Mix cornstarch with water if using, and add during the last 10–15 minutes of cooking for a thicker sauce.
  7. Return chicken to sauce and garnish with fresh parsley before serving.
