Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and prepare a baking sheet with non-stick spray.
  2. In a frying pan, heat 1 tsp. of oil over medium heat, and sauté diced onion and red pepper for 4-5 minutes.
  3. Add diced ham (if using), rinsed black beans, and chunky salsa, then season with salt, pepper, and garlic powder. Cook for 3-4 minutes.
  4. Pour in beaten eggs and scramble for 3-4 minutes until just firm but moist.
  5. On each tortilla, add a tablespoon of the veggie-bean mixture, scrambled eggs, and a sprinkle of cheese; roll tightly and place seam-side down on the baking sheet.
  6. Lightly spray the tops with cooking spray and bake for 8-10 minutes until golden brown and crispy.
  7. Serve warm with sour cream, guacamole, or additional salsa for dipping.
