- In a mixing bowl, combine turkey thigh mince and sausage meat with sage seasoning. Mix until fully combined.

- Lay one pastry strip flat, place a strip of turkey mince in the center, sprinkle cranberries, then add sausage mixture.
- Brush edges of the pastry with beaten egg, roll over the filling, and seal tightly.
- Shape the rolled lengths into two concentric rings on the prepared baking tray.
- Cut each roll into 24 wedge-shaped pieces and arrange cut-side up on the tray.
- Brush the tops with beaten egg for a shiny finish and decorate with pastry scraps if desired.
- Bake for 35 minutes or until golden brown, rotating halfway through.
- Transfer to a wire rack to cool slightly before serving warm.
