Step-by-Step Instructions
  1. Preheat your oven to 220°C (200°C fan)/425°F/Gas mark 7.
  2. In a mixing bowl, combine turkey thigh mince and sausage meat with sage seasoning. Mix until fully combined.
  3. Roll out the pastry on a floured surface and cut each sheet in half lengthways.
  4. Lay one pastry strip flat, place a strip of turkey mince in the center, sprinkle cranberries, then add sausage mixture.
  5. Brush edges of the pastry with beaten egg, roll over the filling, and seal tightly.
  6. Shape the rolled lengths into two concentric rings on the prepared baking tray.
  7. Cut each roll into 24 wedge-shaped pieces and arrange cut-side up on the tray.
  8. Brush the tops with beaten egg for a shiny finish and decorate with pastry scraps if desired.
  9. Bake for 35 minutes or until golden brown, rotating halfway through.
  10. Transfer to a wire rack to cool slightly before serving warm.
