  • 1 can Black Beans or kidney/pinto beans
  • 1 can Diced Tomatoes with Green Chiles or regular diced tomatoes
  • 1 cup Sour Cream or Greek yogurt
  • 3 cups Fritos Corn Chips or Doritos
  • 2 cups Mexican-Style Shredded Cheese Monterey Jack or sharp cheddar
For the Toppings
  • 1/4 cup Green Onions sliced thinly
  • 1/2 cup Sour Cream to taste
  • 1 cup Guacamole
  • 1/2 cup Salsa to taste
  • 1/4 cup Jalapenos sliced

Method
 

Step‑by‑Step Instructions for Walking Taco Casserole
  1. Preheat your oven to 350°F (175°C). Coat your baking dish with nonstick spray.
  2. In a large skillet, cook the ground beef and chopped onion over medium heat for 6-8 minutes until browned.
  3. Stir in taco seasoning and water, bring to boil, then reduce heat and add black beans and diced tomatoes. Simmer for 8-10 minutes.
  4. Layer Fritos in the baking dish, then sprinkle half of the shredded cheese over them.
  5. Spoon the beef mixture over the cheese and top with the remaining cheese.
  6. Cover with foil and bake for 15 minutes, then uncover and bake for another 5 minutes until cheese is bubbly.
  7. Let cool for a few minutes and serve hot with toppings.
