  • 2 tbsp Olive Oil Can substitute with other oils

For the Herby Ranch Slaw
  • 1 cup Plain Yogurt Or Non-Dairy Alternative
  • 2 tbsp Fresh Dill Provides herbal flavor
  • 2 tbsp Fresh Parsley
  • 2 tbsp Fresh Chives
  • 1 tbsp Juice from ½ Lemon For tanginess
  • 2 cups Shredded Green Cabbage Or coleslaw mix
For Serving

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Toss the chicken breasts with brown sugar, smoked paprika, garlic powder, onion powder, cayenne pepper, kosher salt, and olive oil.
  3. Add lemon slices to the chicken mixture, distribute evenly.
Roasting
  1. Spread chicken and lemon on a sheet pan; roast for 15 minutes until caramelized.
  2. Toss chicken, roast for another 4-7 minutes until cooked to 165°F (75°C).
Slaw Preparation
  1. In a bowl, whisk together yogurt, dill, parsley, chives, lemon juice, and salt.
  2. Fold in shredded cabbage; let rest for 10-15 minutes.
Serving
  1. Warm pitas in the oven for 3-5 minutes.
  2. Slice open pitas and fill with herby slaw, roasted chicken, and avocado.
