  1. Begin by dicing the onions, chopping the garlic and fresh ginger, and cutting the beef into bite-sized cubes.
  2. Place the cubed beef, diced onions, garlic, ginger, diced tomatoes, coconut milk, curry powder, salt, and black pepper into your slow cooker. Stir everything thoroughly.
  3. Allow the Slow Cooker Beef Curry to cook on low for 6 hours or on high for 3 hours.
  4. After cooking, the beef should be tender. Stir in fresh spinach in the last 15 minutes if desired.
