- Combine the boneless chicken breasts, chicken broth, chopped onion, minced garlic, dried oregano, dried thyme, salt, pepper, and the lemon juice and zest in the slow cooker.
- Cover and cook on LOW for 4-5 hours, or on HIGH for 2-3 hours until chicken is cooked through.
- Remove the chicken, shred it into bite-sized pieces and return it to the slow cooker.
- Stir in the uncooked rice, mixing it with the remaining broth and juices.
- Cover and cook on HIGH for an additional 30-40 minutes until the rice is tender.
- Adjust seasoning with more lemon juice, salt, or pepper if needed.
- Garnish with freshly chopped parsley and serve warm.
