  • 3 cloves Garlic Minced.

  • 1 teaspoon Dried Thyme Fresh thyme is also a lovely option.
For Seasoning
  • Salt and Pepper To taste.

Step-by-Step Instructions
  1. Combine the boneless chicken breasts, chicken broth, chopped onion, minced garlic, dried oregano, dried thyme, salt, pepper, and the lemon juice and zest in the slow cooker.
  2. Cover and cook on LOW for 4-5 hours, or on HIGH for 2-3 hours until chicken is cooked through.
  3. Remove the chicken, shred it into bite-sized pieces and return it to the slow cooker.
  4. Stir in the uncooked rice, mixing it with the remaining broth and juices.
  5. Cover and cook on HIGH for an additional 30-40 minutes until the rice is tender.
  6. Adjust seasoning with more lemon juice, salt, or pepper if needed.
  7. Garnish with freshly chopped parsley and serve warm.
