Preparation
- Pulse the fresh cranberries and shelled pistachios in a food processor until finely chopped, about 15-20 seconds. Set aside half for coating.
- In a mixing bowl, blend the goat cheese and cream cheese, then add half of the chopped mixture along with honey, thyme, rosemary, ginger, cinnamon, and salt and pepper. Mix until smooth, about 2-3 minutes.
- Form the cheese mixture into a log using plastic wrap and freeze for 20-30 minutes to firm up.
- Coat the log with the reserved chopped cranberries and pistachios by rolling it over the mixture.
- Wrap the coated cheese log again in plastic wrap and refrigerate for at least 2 hours. Serve at room temperature drizzled with honey.
