Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and prepare a baking sheet with non-stick spray.
  2. Heat 1 tablespoon of oil in a frying pan over medium heat. Add diced onion and red pepper, sauté for 5–7 minutes.
  3. If using, stir in diced ham and cook for an additional 2–3 minutes.
  4. Add black beans and chunky salsa to the pan, season, and simmer for about 3 minutes.
  5. In the same pan, add more oil if needed and scramble the beaten eggs over medium heat.
  6. Fill each tortilla with a tablespoon of the mixture, scrambled eggs, and cheddar cheese, then roll tightly.
  7. Arrange the rolled taquitos seam-side down on the baking sheet and lightly spray the tops with cooking spray.
  8. Bake in the oven for 8–10 minutes until golden brown and crispy.
  9. Let cool for a minute before serving with salsa and optional toppings.
  10. To freeze, allow taquitos to cool and then flash freeze before transferring to zip-lock bags.
