Method
 

Step-by-Step Instructions
  1. Cook the sushi rice according to the package instructions, about 15 minutes.
  2. Let the rice cool for a few minutes while still warm.
  3. Heat sesame oil in a skillet over medium heat, then sauté the Spam for 3-4 minutes on each side until crispy.
  4. On a bamboo sushi mat, lay a sheet of nori shiny side down and spread a thin layer of rice, leaving a 1-inch margin.
  5. Place sautéed Spam and the prepared fillings on the rice.
  6. Drizzle with soy sauce and sprinkle with sesame seeds, if desired.
  7. Roll the kimbap tightly and seal the edge with water.
  8. Slice the rolled kimbap into 1-inch pieces and serve with pickled radish or kimchi.
