Step-by-Step Instructions
  1. Soak 1 cup of white rice in water for at least 10 minutes; chop 1 onion, 2 garlic cloves, and 1 red bell pepper.
  2. Heat 2 tablespoons of oil in a skillet over medium heat; sauté onion and bell pepper for 3 minutes.
  3. Add minced garlic and 1 tsp each of spices; sauté for 1 minute.
  4. Drain rice and add to skillet; pour in 1 cup broth and 1 cup salsa, bring to boil.
  5. Reduce heat, cover, and simmer undisturbed for 15-20 minutes.
  6. Fluff the rice, stir in drained kidney beans and optional green olives; garnish with fresh herbs.
