Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (218°C). Line a baking sheet with parchment paper.
  2. Wash, peel, and cube sweet potatoes. Toss with chili oil, olive oil, sea salt, and black pepper.
  3. Spread sweet potatoes on the baking sheet and roast for 25-30 minutes, stirring halfway.
  4. Cook quinoa or brown rice according to package instructions, fluff when done.
  5. Whisk tahini, soy sauce, rice vinegar, maple syrup, and warm water in a bowl.
  6. Assemble bowls with grains, roasted sweet potatoes, and fresh veggies.
  7. Drizzle the tahini dressing on top and garnish with sesame seeds and herbs.
