Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Gather all your ingredients and equipment.
  2. In a medium bowl, combine honey, chipotle chili powder, olive oil, garlic powder, salt, and pepper. Mix well. Add chicken thighs and coat thoroughly. Marinate for at least 15 minutes.
  3. Peel and chop russet potatoes into even chunks. Boil in salted water over medium-high heat for 15-20 minutes until fork-tender.
  4. Drain potatoes and return to pot. Add milk, unsalted butter, and smoked gouda. Mash until smooth. Season with salt and pepper to taste.
  5. Transfer marinated chicken to a baking dish, skin-side up. Bake for 25-30 minutes until the internal temperature reaches 165°F (75°C).
  6. Let chicken rest for a few minutes. Serve with creamy smoked gouda mashed potatoes and drizzle juices from the baking dish over chicken.
