For the Salad
  • 8 cups Spring mix salad greens use pre-washed for convenience
  • 1 cup Cherry tomatoes or grape tomatoes if preferred
  • 1 medium Cucumber or English cucumber for milder flavor
  • 1/4 cup Red onion can be omitted or sliced thinly for kids
  • 1/2 cup Feta cheese or goat cheese for a milder flavor, omit for dairy-free
  • 1/2 cup Walnuts or Pecans toasting enhances taste and aroma
For the Dressing
  • 3 tablespoons Balsamic vinegar
  • 2 tablespoons Honey or maple syrup/agave nectar for vegan option
  • 1/4 cup Olive oil extra-virgin recommended
  • to taste Salt and freshly ground black pepper essential for seasoning

Method
 

Preparation
  1. Rinse the spring mix salad greens thoroughly under cold water and dry them using a salad spinner.
  2. Slice the cherry tomatoes in half and add them to the salad bowl. Peel and slice the cucumber, and add it.
  3. Thinly slice the red onion if using, and gently mix all the vegetables in the salad bowl.
  4. Crumble feta cheese over the salad and toast walnuts or pecans in a skillet before adding on top.
  5. In a small bowl, combine balsamic vinegar, honey, and olive oil. Whisk until well blended and season with salt and pepper.
  6. Drizzle the dressing over the salad before serving and toss gently to combine.
