Step-by-Step Instructions
  1. Preheat the oven to 400°F (200°C) and prepare the chicken breasts by trimming fat and patting dry.
  2. In a skillet, heat olive oil over medium-high heat. Sear chicken for 5-7 minutes per side until golden brown.
  3. Remove chicken and add more olive oil; sauté garlic until fragrant and then add sun-dried tomatoes.
  4. Add chicken broth and basil, simmer for 2-3 minutes to thicken.
  5. Return chicken to skillet, spoon sauce over it, top with Parmesan if desired, and simmer for 5 minutes.
  6. Transfer to oven and bake for 15-20 minutes until chicken reaches 165°F (75°C).
  7. Let it rest for a few minutes before serving over pasta or salad.
