  • 1 pound Shrimp fresh or thawed frozen
  • 1/2 cup Sweet Chili Sauce or homemade using honey and sriracha
  • 2 tablespoons Soy Sauce substitute with tamari for gluten-free
  • 3 cloves Minced Garlic fresh preferred
  • 1 teaspoon Grated Ginger fresh preferred
For the Pineapple & Cooking
  • 2 cups Pineapple fresh or well-drained canned
  • 2 tablespoons Olive Oil
Optional Enhancements
  • 1/4 cup Cilantro optional
  • 1 tablespoon Lime Juice for brightness
  • 1/2 teaspoon Red Pepper Flakes to taste

Method
 

Step-by-Step Instructions
  1. In a large bowl, combine the shrimp, sweet chili sauce, soy sauce, minced garlic, and grated ginger. Toss gently to coat the shrimp completely in the marinade. Cover and let marinate for 15-30 minutes.
  2. While the shrimp marinates, cut the fresh pineapple into bite-sized chunks, or ensure canned pineapple is well-drained. Set aside.
  3. Heat a large skillet over medium-high heat and add olive oil. Allow it to shimmer.
  4. Add the marinated shrimp to the skillet in a single layer. Cook for 2-3 minutes on one side until pink and opaque. Flip and cook for another 2-3 minutes.
  5. Gently add the pineapple to the skillet. Stir and cook for an additional 2-3 minutes.
  6. Remove from heat and toss in cilantro and lime juice if desired. Serve over jasmine rice or in tortillas.
