Step-by-Step Instructions
  1. In a large bowl, combine shrimp with sweet chili sauce, soy sauce, minced garlic, and grated ginger. Toss well and cover with plastic wrap. Refrigerate for 15 to 30 minutes.
  2. Slice fresh pineapple into bite-sized chunks or drain canned pineapple and set aside.
  3. Heat a skillet over medium-high heat, add olive oil, and once shimmering, add marinated shrimp. Cook for 2-3 minutes on each side until pink and opaque.
  4. Gently add prepared pineapple to the skillet with cooked shrimp. Stir and heat for an additional 2-3 minutes until fragrant.
  5. Plate the Sweet Chili Pineapple Shrimp and optionally garnish with fresh cilantro or lime juice. Serve alone or with rice or salad.
