- In a large bowl, combine shrimp with sweet chili sauce, soy sauce, minced garlic, and grated ginger. Toss well and cover with plastic wrap. Refrigerate for 15 to 30 minutes.
- Slice fresh pineapple into bite-sized chunks or drain canned pineapple and set aside.
- Heat a skillet over medium-high heat, add olive oil, and once shimmering, add marinated shrimp. Cook for 2-3 minutes on each side until pink and opaque.
- Gently add prepared pineapple to the skillet with cooked shrimp. Stir and heat for an additional 2-3 minutes until fragrant.
