Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, add chopped cucumbers, halved cherry tomatoes, and thinly sliced red onion. Gently mix the vegetables together until they are evenly distributed.
  2. In a separate small bowl, combine apple cider vinegar, olive oil, sugar (or honey), salt, black pepper, and dried oregano. Whisk these ingredients for about 30 seconds until fully blended.
  3. Drizzle the whisked dressing over your vegetable mixture in the large bowl. Gently toss the ingredients to ensure every piece is coated evenly.
  4. Cover the bowl with plastic wrap or a lid and refrigerate the salad for at least 30 minutes, or up to 2 hours.
  5. Just before serving, remove the salad from the refrigerator and sprinkle chopped fresh parsley over the top.
