  3. Heat olive oil in a cast-iron skillet over medium-high heat. Sear marinated chicken for 5–7 minutes per side until golden brown.
  4. Pour the remaining coconut milk marinade into the skillet. Simmer for 3–5 minutes until the sauce thickens.
