- In a large mixing bowl, combine oats, almond butter, honey, cinnamon, and vanilla extract. Stir until the mixture is well integrated and sticky, taking about 2-3 minutes.
- Line a muffin pan with paper muffin liners. Take a spoonful of the granola mixture and press it firmly into the bottom of each liner to create a crust.
- Scoop an ample tablespoon of Greek yogurt into each muffin liner on top of the granola base and smooth it out.
- Evenly scatter fresh berries over the yogurt in each cup.
- Carefully place the muffin pan in the freezer for at least 3 hours until firm and set.
- Once frozen, remove the yogurt granola cups from the muffin pan and peel away the liners.
