- In a mixing bowl, combine 2 cups of Greek yogurt, ½ cup of peanut butter, ¼ cup of maple syrup (or honey), and 1 teaspoon of vanilla extract. Stir vigorously for about 2-3 minutes until smooth.
- If desired, gently fold in ½ cup of mini chocolate chips into the mixture.
- Line a baking sheet with parchment paper. Drop tablespoon-sized dollops of the mixture onto the sheet, leaving space between each dollop.
- Optional: Sprinkle chopped peanuts or flaky sea salt on top of each dollop.
- Place the baking sheet in the freezer and allow the bites to freeze for at least 2-3 hours.
- Once frozen, transfer them to an airtight container or freezer bag for storage.
