  • 500 grams Fresh Green Beans Trimmed and washed.
  • 200 grams Feta Cheese Crumpled, can substitute with goat cheese.
  • 100 grams Walnuts Chopped, can substitute with almonds or omit.
For the Vinaigrette
  • 60 ml Extra Virgin Olive Oil Robust flavor.
  • 50 ml Fresh Lemon Juice Juice from about 1 lemon.
  • 1 clove Garlic Minced, optional.

Method
 

Preparation Steps
  1. Trim the ends of fresh green beans and steam them in boiling water for 3-5 minutes until bright green and just tender.
  2. Transfer steamed green beans to ice water to stop the cooking process. Let sit for 5 minutes, then drain.
  3. In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper until well combined.
  4. In a large bowl, combine the green beans, walnuts, and feta cheese, mixing gently.
  5. Drizzle the vinaigrette over the salad and toss gently to coat all ingredients.
  6. Serve chilled or at room temperature as a side dish or standalone meal.
