Rice

Method
 

Preparation
  1. In a medium bowl, whisk together honey, lime juice, lime zest, minced garlic, ground cumin, and a pinch of salt and pepper.
  2. Coat chicken breasts with the honey lime marinade and refrigerate for at least 30 minutes, ideally up to 2 hours.
  3. Rinse jasmine rice under cold water, then bring chicken broth to a boil in a medium saucepan. Add rice, cover, reduce heat, and simmer for about 15 minutes.
  4. Preheat grill or grill pan over medium heat. Remove chicken from marinade and grill for about 6-7 minutes on each side until cooked through.
  5. In a bowl, combine diced avocados, chopped red onion, chopped cilantro, and olive oil. Toss gently to mix.
  6. Assemble the stack by layering rice, grilled chicken, and avocado mix, garnished with lime wedges.

Notes
