- In a medium bowl, whisk together honey, lime juice, lime zest, minced garlic, ground cumin, and a pinch of salt and pepper.
- Coat chicken breasts with the honey lime marinade and refrigerate for at least 30 minutes, ideally up to 2 hours.
- Rinse jasmine rice under cold water, then bring chicken broth to a boil in a medium saucepan. Add rice, cover, reduce heat, and simmer for about 15 minutes.
- Preheat grill or grill pan over medium heat. Remove chicken from marinade and grill for about 6-7 minutes on each side until cooked through.
- In a bowl, combine diced avocados, chopped red onion, chopped cilantro, and olive oil. Toss gently to mix.
- Assemble the stack by layering rice, grilled chicken, and avocado mix, garnished with lime wedges.
