Preparation
- Remove tough stems from the curly kale and wash thoroughly under cold water. Pat dry and place in a large mixing bowl.
- Add 1 teaspoon of sea salt and massage the kale for 1-2 minutes until leaves soften.
- Crush or chop croutons and mix them evenly into the kale.
- In a small bowl, whisk together 3 tablespoons of olive oil, lemon juice, minced garlic, and black pepper for about 30 seconds.
- Pour the dressing over the kale and croutons, sprinkle Parmesan cheese on top, and gently toss.
- Serve immediately or chill for 10 minutes before serving.
