  • 1 bunch Curly Kale remove tough stems
  • 2 cups Croutons seasoned to your liking
  • 3 tablespoons Freshly Grated Parmesan Cheese or feta/goat cheese for variation
For the Dressing
  • 3 tablespoons Olive Oil high-quality extra virgin recommended
  • 1 medium Lemon Juice freshly squeezed for best flavor
  • 1 clove Garlic minced
  • 1 teaspoon Sea Salt for massaging kale
  • 1 teaspoon Black Pepper adjust according to taste

Method
 

Preparation
  1. Remove tough stems from the curly kale and wash thoroughly under cold water. Pat dry and place in a large mixing bowl.
  2. Add 1 teaspoon of sea salt and massage the kale for 1-2 minutes until leaves soften.
  3. Crush or chop croutons and mix them evenly into the kale.
  4. In a small bowl, whisk together 3 tablespoons of olive oil, lemon juice, minced garlic, and black pepper for about 30 seconds.
  5. Pour the dressing over the kale and croutons, sprinkle Parmesan cheese on top, and gently toss.
  6. Serve immediately or chill for 10 minutes before serving.
