  • 1 cup Shredded Cucumber squeeze out excess water
  • 0.5 cup Lemon Juice adjust to taste
  • 2 tablespoons Dill fresh or dried
  • 1 teaspoon Garlic Powder can substitute with fresh garlic
  • to taste Salt & Pepper adjust according to preference
Salad Ingredients
  • 2 cups Shredded Chicken rotisserie chicken is a great shortcut
  • 0.5 cup Finely Chopped Red Onion can substitute with green onions
  • 0.5 cup Sliced Kalamata Olives substitute with other olives if preferred
  • 0.5 cup Crumbled Feta use vegan cheese for dairy-free option
  • a handful Chopped Fresh Parsley optional but recommended

Method
 

Preparation
  1. In a large mixing bowl, combine Greek yogurt, shredded cucumber, lemon juice, dill, garlic powder, salt, and pepper. Mix well until smooth.
  2. Add shredded chicken, red onion, Kalamata olives, feta, and parsley to the tzatziki mixture. Stir gently until evenly coated.
  3. Taste for seasoning and adjust with more lemon juice, salt, or pepper as desired.
  4. Cover and refrigerate the salad for at least 30 minutes to allow flavors to meld.
  5. Serve in pita pockets or on romaine leaves, or alongside roasted potatoes or couscous.
