Method
 

Cooking Instructions
  1. In a large pot, bring salted water to a boil. Add rotini pasta and cook for 8-10 minutes until al dente. Drain and set aside to cool.
  2. Dice cucumber, carrot, sweet onion, and bell pepper. In a mixing bowl, combine all fresh vegetables and olives.
  3. In a mason jar, combine Greek yogurt, red wine vinegar, lemon juice, minced garlic, onion powder, oregano, and dill. Shake well to blend.
  4. Once pasta is cool, add it to the vegetable mixture. Pour dressing over and toss gently to coat.
  5. Cover and refrigerate for at least 1 hour before serving.
