- In a large pot, bring salted water to a boil. Add rotini pasta and cook for 8-10 minutes until al dente. Drain and set aside to cool.
- Dice cucumber, carrot, sweet onion, and bell pepper. In a mixing bowl, combine all fresh vegetables and olives.
- In a mason jar, combine Greek yogurt, red wine vinegar, lemon juice, minced garlic, onion powder, oregano, and dill. Shake well to blend.
- Once pasta is cool, add it to the vegetable mixture. Pour dressing over and toss gently to coat.
- Cover and refrigerate for at least 1 hour before serving.
