  • 1 cup sweet corn fresh or frozen can substitute
  • 1 can diced tomatoes with green chiles or fresh diced tomatoes
  • 2 cups prepared ready rice or cooked long-grain or brown rice
  • 2 cups Colby Jack cheese, shredded or mozzarella or cheddar
For Garnishing
  • fresh cilantro optional
  • sliced avocado optional

  • crushed tortilla chips optional

Step‑by‑Step Instructions
  1. Heat a large oven-safe skillet over medium heat, lightly greasing it with cooking spray. Add the beef and onion, cooking until browned.
  2. Sprinkle in the taco seasoning and pour in the salsa. Mix well, then add the black beans, corn, and tomatoes. Simmer for 5-6 minutes.
  3. Stir in the prepared ready rice and spread it evenly. Sprinkle cheese on top.
  4. Transfer to the oven under the broiler for about 1 minute until bubbly and golden.
  5. Remove from oven, garnish with cilantro and serve hot.
