Instructions for Cherry Amaretto Tiramisu
- In a large mixing bowl, combine the mascarpone cheese and heavy cream. Beat on medium speed until smooth and fluffy.
- Add amaretto liqueur, cherry juice, and vanilla extract into the mixture. Mix until well incorporated.
- In a separate bowl, stir together sugar and cherry preserves. Fold this sweet mixture into the mascarpone cream.
- Fold in chopped fresh cherries carefully without deflating the mixture.
- In a shallow dish, mix equal parts amaretto liqueur and cherry juice. Dip ladyfingers briefly in this mixture.
- Arrange a layer of dipped ladyfingers in a 9x13 inch baking dish.
- Spoon half of the mascarpone mixture over the layer of ladyfingers, spreading it gently.
- Add another layer of dipped ladyfingers and top with the remaining mascarpone mixture.
- Cover the dish with plastic wrap and refrigerate for at least 4 hours, ideally overnight.
- Before serving, dust the top with cocoa powder and sprinkle with dark chocolate.
