Method
 

Instructions for Cherry Amaretto Tiramisu
  1. In a large mixing bowl, combine the mascarpone cheese and heavy cream. Beat on medium speed until smooth and fluffy.
  2. Add amaretto liqueur, cherry juice, and vanilla extract into the mixture. Mix until well incorporated.
  3. In a separate bowl, stir together sugar and cherry preserves. Fold this sweet mixture into the mascarpone cream.
  4. Fold in chopped fresh cherries carefully without deflating the mixture.
  5. In a shallow dish, mix equal parts amaretto liqueur and cherry juice. Dip ladyfingers briefly in this mixture.
  6. Arrange a layer of dipped ladyfingers in a 9x13 inch baking dish.
  7. Spoon half of the mascarpone mixture over the layer of ladyfingers, spreading it gently.
  8. Add another layer of dipped ladyfingers and top with the remaining mascarpone mixture.
  9. Cover the dish with plastic wrap and refrigerate for at least 4 hours, ideally overnight.
  10. Before serving, dust the top with cocoa powder and sprinkle with dark chocolate.
