  2. Prepare a shallow dish with an egg and flour mixture. In another dish, combine panko, Romano cheese, oregano, lemon zest, garlic powder, and pepper.
  3. Dredge chicken in egg mixture, then press into the panko mixture, ensuring a full coating.
  4. Heat olive oil in a skillet over medium-high heat and fry chicken cutlets for 2-3 minutes per side until golden brown.
  5. Place fried cutlets on a baking sheet, top with mozzarella and provolone, and bake for 8-10 minutes until cheese is melted.
