Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Grease a 9-inch pie dish or an 8x8-inch baking dish with cooking spray or olive oil.
  2. Set aside the greased baking dish while you prepare the egg mixture.
  3. In a food processor, blend the cottage cheese for about 30 seconds until smooth and creamy.
  4. In a large mixing bowl, whisk together the eggs. Fold in the blended cottage cheese, Parmesan cheese, chives, garlic powder, paprika, salt, and pepper.
  5. Fold in the diced bell peppers, spinach, and chopped sun-dried tomatoes, making sure to drain excess moisture.
