  • 0.5 cup Basil Pesto Use homemade or store-bought.
  • 1 cup Cooked Chicken Breast Shredded or chopped; rotisserie chicken works well.
  • 1 cup Shredded Mozzarella Cheese Fresh mozzarella can be used for a richer taste.
  • 0.25 cup Cherry Tomatoes Halved; grape or heirloom tomatoes work well.
  • 2 tbsp Red Onion Thinly sliced; optional.
For Finishing Touches
  • 1 tbsp Olive Oil Brush on flatbread.
  • Salt & Black Pepper To taste.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Place the naan or flatbreads on the prepared baking sheet and brush with olive oil.
  3. Spread the basil pesto evenly over each flatbread.
  4. Add the shredded chicken breast over the pesto and sprinkle with shredded mozzarella.
  5. Scatter halved cherry tomatoes and red onion on top, season with salt and pepper.
  6. Bake for 10 to 12 minutes until the cheese is melted and edges are golden brown.
  7. Remove from the oven and let cool slightly. Garnish with fresh basil and serve.
