Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C).
  2. Combine flour and powdered sugar in a bowl. Cut in the cold butter until it resembles coarse crumbs. Press into a greased 9x13-inch baking dish.
  3. Bake the crust for about 15 minutes until light golden brown.
  4. Toss rhubarb with sugar in a separate bowl. Beat eggs with flour and vanilla, then mix with the rhubarb.
  5. Pour the filling over the baked crust and bake for 30-35 minutes until filling is set and slightly wobbly.
  6. Cool in the pan at room temperature, then chill in the refrigerator for at least one hour before serving.
