- Heat 2 tablespoons of olive oil over medium heat until shimmering, about 1 minute.
- Add 1 finely chopped onion to the pot and sauté for about 5 minutes.
- Stir in 2 minced garlic cloves, 1 teaspoon cumin powder, and ½ teaspoon turmeric, and sauté for 1 minute.
- Add 2 cubed chicken breasts and cook for 5-7 minutes, stirring until browned.
- Stir in 2 cups of rinsed basmati rice, mixing well.
- Pour in 3 cups of chicken broth and bring to a gentle boil, then cover and simmer for 20 minutes.
- In the last 5 minutes, add 1 cup of frozen peas.
- Once cooked, fluff the rice with a fork and garnish with fresh coriander.
