Preparation Steps
  1. Start by washing the radishes thoroughly under cold water to remove any dirt. Slice the radishes into even rounds, about 1/8 inch thick. Arrange the slices in a large mixing bowl.
  2. Squeeze the juice of half a lemon over the sliced radishes, and add a pinch of salt. Toss gently and let sit for 5 minutes.
  3. Gently massage the radish slices for about 1-2 minutes to release their natural juices.
  4. Drizzle olive oil over the radish mixture, then grate fresh Parmesan and add torn dill leaves. Lightly mix together.
  5. Transfer the salad onto a serving platter, spreading the radish slices out evenly.
  6. Zest the remaining lemon over the top, then sprinkle extra Parmesan, more dill, and black pepper to finish.
