Method
 

Step-by-Step Instructions
  1. Preheat your oven to 325°F (160°C) and line a loaf pan with parchment paper.
  2. Peel and finely slice the Yukon Gold potatoes into 1/16-inch rounds.
  3. Begin layering the dry potato slices in your prepared loaf pan.
  4. If desired, sprinkle herbs or cheese over some of the layers.
  5. Cover with parchment paper and seal with foil, then add a weight on top.
  6. Bake for approximately 1 hour 45 minutes to 2 hours until tender.
  7. Cool to room temperature, then refrigerate overnight.
  8. Carefully remove from the pan and slice into squares or rectangles.
  9. Sear slices in a skillet until golden and crispy, about 3-4 minutes per side.
  10. Serve warm garnished with fresh herbs or a drizzle of truffle oil.
