- In a medium bowl, whisk together vegetable broth/water, tamari, maple syrup, rice vinegar, minced garlic, grated ginger, and cornstarch to make the teriyaki sauce.
- Wash and slice fresh mushrooms, trim snow peas, and chop green onions.
- Heat a non-stick skillet over medium-high heat, add vegetable broth, and sauté sliced mushrooms for about 3 minutes until tender.
- Stir in snow peas and white parts of green onions, cooking for another 3-4 minutes until snow peas are crisp-tender.
- Pour in the teriyaki sauce, stir well, and let simmer for 2-3 minutes until the sauce thickens.
