  1. In a medium bowl, whisk together vegetable broth/water, tamari, maple syrup, rice vinegar, minced garlic, grated ginger, and cornstarch to make the teriyaki sauce.
  2. Wash and slice fresh mushrooms, trim snow peas, and chop green onions.
  3. Heat a non-stick skillet over medium-high heat, add vegetable broth, and sauté sliced mushrooms for about 3 minutes until tender.
  4. Stir in snow peas and white parts of green onions, cooking for another 3-4 minutes until snow peas are crisp-tender.
  5. Pour in the teriyaki sauce, stir well, and let simmer for 2-3 minutes until the sauce thickens.
